In case you were wondering what it’s like to have a home bakery, it’s messy. Very, very messy. And yet still, very, very awesome.
Back to the cake… It is covered in fondant. A lot of people do not like fondant, they think it’s too gummy or that it tastes weird. I kind of like it. Paul loves the stuff. Either way the cake is frosted underneath so if you don’t like fondant you can just pull it off. The main reason for using fondant is that it gives a very clean, smooth look in comparison to regular frosting. On this particular cake it was important to use fondant because the cake was going to be outside, in Colorado, in June. And it just so happened to be about 90 degrees that day. Buttercream would have melted right off and the ruffles would have turned to a big puddle of sticky (yet delicious) mess around the bottom.
